Easter is, by default, one of the greatest times of the year if, like me, you are a chocolate fiend. It’s the perfect time to explore baking and have fun in the kitchen, but if you’re culinary skills leave a little to be desired, here are some easy treats to tickle your taste buds!
Carrot Chocolate Covered Strawberries
Inspired by my obsession with Harry & David, this dessert makes a chocolate covered strawberry resemble the Easter bunny’s favourite treat.
What you’ll need:
Strawberries (however many you want to make)
White Chocolate (20 strawberries usually requires about three to four bars)
Red and yellow food coloring
Parchment Paper
Instructions:
- First start by rinsing the strawberries. Place them on a paper to dry.
- Line a baking sheet with the parchment paper. (Hint: use tape to keep the parchment paper down)
- Pour about a mug of water into a medium size saucepan and bring it to simmer.
- Chop your white chocolate bars into smaller pieces – about the size of a sugar cube.
- Get a heatproof bowl that is slightly bigger than the mouth of your saucepan, put the chocolate pieces in it, and place the heatproof bowl on top of the saucepan once the water is ready. Make sure the water doesn’t touch the bottom of the bowl.
- Stir the chocolate constantly until it softens and is no longer in chunks, while still on heat add the red and yellow food coloring to create an orange that resembles the color of a carrot.
- Remove the bowl from heat once you have achieved the right consistency and color.
- Dip the strawberries in the chocolate up to the stem and place on the parchment paper until it dries
- Add any details that you want or leave them be, and you have your easy carrot strawberries all ready for munching on Easter morning!
Bunny Tail Truffles
For those who aren’t chocolate fans, try this simple dessert recipe geared for coconut lovers. These cute little treats look like little bunny tails and next to your carrot strawberries, will make it look like the Easter Bunny paid a visit.
What you’ll need:
8 ounces of soft cream cheese
4 cups of powdered sugar
1 tsp of almond or coconut extract
3 cups of sweetened shredded coconut
Instructions:
- Put the cream cheese in a medium to large bowl.
- Use a whisk or an electric mixer to beat the cream cheese until it appears fluffy
- Add the powdered sugar gradually until the mixture is the consistency of thick dough. To test if the dough is right, try to roll a one inch ball out of it and if it holds then you are good to go. If not, add more powdered sugar.
- Create as many balls as the dough will allow, then roll the balls into coconut – if the coconut isn’t sticking just use corn syrup!
- Place your bunny tails on a plate and serve!
Cadbury Chocolate Egg nests
Some of us wait all year so that we have an excuse to eat an excess of Cadbury Mini Eggs. This recipe allows for the indulgence of this guilty pleasure.
What you’ll need:
12 ounces of milk chocolate chips
12 ounce bag butterscotch chips
85g of shredded wheat, crushed
2 bags of Cadburry Mini Chocolate eggs
Instructions:
- Melt the chocolate using the same technique described above in the carrot strawberries.
- Remove from heat and pour in the shredded wheat, and stir well to combine.
- Spoon enough of the chocolate wheat mixture into cupcake cases, and shape into a nest like structure.
- Place three mini eggs on top of the nest
- Chill for two hours
- Serve with or without the cupcake tins, and enjoy!
